
Sneaky Veggie Chocolate Oatmeal
I’m not a savory breakfast person, which can make it challenging to get in some veggies at breakfast. Well, not anymore. This Sneaky Veggie Chocolate Oatmeal contains carrots and spinach - which are undetectable! This oatmeal is packed with fiber, vitamins, and antioxidants, and perfect for both kids and adults alike.

Ingredients:
1 cup milk of your choice
1 cup baby carrots
1 cup spinach
1 cup ripe bananas or 1 cup unsweetened applesauce
1/2 cup sugar or sweetener of choice
2 tsp vanilla extract
1 tsp kosher salt
2 eggs
2 tbsp cocoa powder
1 tsp baking soda
2 ½ cups rolled oats
½ cup chocolate chips (optional)
½ cup mix-ins (such as nuts, fruit, seeds, or peanut butter chips - also optional)
Directions:
Preheat the oven to 350 degrees Fahrenheit.
Spray an 8x10 baking dish with non-stick cooking spray.
In a high-speed blender, place the milk, carrots, spinach, bananas, sugar, vanilla, salt, eggs, baking soda, and cocoa powder and blend until a smoothie-like texture. Make sure there are no chunks of carrots.
While the blender is running, add the oats into a medium-size mixing bowl.
Pour the blender contents over the oats and mix.
Fold in the chocolate chips and add-ins.
Pour the oat mixture into a baking dish—option to top off oats with some extra add-ins.
Place in the oven for about 20-23 minutes.
Cut into desire-sized pieces, and top with your favorite fruit or nut butter (optional).
