Sneaky Veggie Chocolate Oatmeal

I’m not a savory breakfast person, which can make it challenging to get in some veggies at breakfast. Well, not anymore. This Sneaky Veggie Chocolate Oatmeal contains carrots and spinach - which are undetectable! This oatmeal is packed with fiber, vitamins, and antioxidants, and perfect for both kids and adults alike.


  • 1 cup milk of your choice

  • 1 cup baby carrots

  • 1 cup spinach

  • 1 cup ripe bananas or 1 cup unsweetened applesauce

  • 1/2 cup sugar or sweetener of choice

  • 2 tsp vanilla extract

  • 1 tsp kosher salt

  • 2 eggs

  • 2 tbsp cocoa powder

  • 1 tsp baking soda

  • 2 ½ cups rolled oats

  • ½ cup chocolate chips (optional)

  • ½ cup mix-ins (such as nuts, fruit, seeds, or peanut butter chips - also optional)


  1. Preheat the oven to 350 degrees Fahrenheit.

  2. Spray an 8x10 baking dish with non-stick cooking spray.

  3. In a high-speed blender, place the milk, carrots, spinach, bananas, sugar, vanilla, salt, eggs, baking soda, and cocoa powder and blend until a smoothie-like texture. Make sure there are no chunks of carrots.

  4. While the blender is running, add the oats into a medium-size mixing bowl.

  5. Pour the blender contents over the oats and mix.

  6. Fold in the chocolate chips and add-ins.

  7. Pour the oat mixture into a baking dish—option to top off oats with some extra add-ins.

  8. Place in the oven for about 20-23 minutes.

  9. Cut into desire-sized pieces, and top with your favorite fruit or nut butter (optional).
