Sneaky Squash Peach Baked Oatmeal
Nothing says summertime like fresh juicy peaches and summer squash. Peaches are packed with nutrients, like vitamin C, vitamin A, and fiber. Summer squash is full of B-vitamins, magnesium, and vitamin K. Paired together, these make an easy, nutrient-dense, and delicious breakfast for the whole week.
Ingredients
3 cups of rolled oats
1 tsp cinnamon
½ tsp kosher salt
1 tsp baking soda
⅓ cup brown sugar
⅓ cup ground flaxseed
1 cup applesauce or 3 bananas
1 summer yellow squash, cubed
1 ¼ cup milk of choice
2 eggs (can sub chia or flax eggs)
3 peaches, 1 chopped, and 2 cut into slices
Directions:
Preheat the oven to 350° F
Spray a medium-size baking pan with non-stick spray
In a medium-size mixing bowl, add the oats, cinnamon, salt, baking soda, sugar, and flaxseed
In a blender, add the applesauce, squash, milk, and eggs and blend until a smooth consistency is formed
Pour the blender contents over the oat mixture, and mix everything together
Fold in the chopped peaches
Pour into the baking pan, and top off with the sliced peaches
Place in the oven for 25-35 minutes
Cut into desire sized pieces, option to top off with almond butter, and enjoy :)
