Christmas is nearly a week a way and with all the holiday sweets and treats it can be hard to find balance when it comes to food. These Protein Cookie Dough Bites are plant-based, protein packed, fiber-rich, and heart-friendly...Did I mention they are Santa approved ;)?


Ingredients:

Wet Ingredients

  • 3/4 cup cashew butter

  • 1/3 cup maple syrup

  • 1 teaspoon vanilla extract

  • 2 tablespoons melted coconut oil

Dry Ingredients

  • 1/2 cup unflavored or vanilla plant based protein powder

  • 1/4 cup chia seeds

  • 1/2 cup almond flour

  • 1/2 cup mini chocolate chips

Directions

  1. In a large bowl add all wet ingredients until well combined

  2. Gradually add protein powder, chia seeds, and almond flour

  3. Once everything is mixed into a "dough" consisntency, fold in the chocolate chips

  4. Roll out into ~ 1 tablespoon balls

  5. Savor, and enjoy

  6. Store in the fridge for about a week or freeze up to 3 months.
