Christmas is nearly a week a way and with all the holiday sweets and treats it can be hard to find balance when it comes to food. These Protein Cookie Dough Bites are plant-based, protein packed, fiber-rich, and heart-friendly...Did I mention they are Santa approved ;)?

Ingredients:
Wet Ingredients
3/4 cup cashew butter
1/3 cup maple syrup
1 teaspoon vanilla extract
2 tablespoons melted coconut oil
Dry Ingredients
1/2 cup unflavored or vanilla plant based protein powder
1/4 cup chia seeds
1/2 cup almond flour
1/2 cup mini chocolate chips
Directions
In a large bowl add all wet ingredients until well combined
Gradually add protein powder, chia seeds, and almond flour
Once everything is mixed into a "dough" consisntency, fold in the chocolate chips
Roll out into ~ 1 tablespoon balls
Savor, and enjoy
Store in the fridge for about a week or freeze up to 3 months.
