One Bowl Pumpkin Pancake Bread

Nothing says Fall like good ‘ole pumpkin. Pumpkin is full of antioxidants, fiber, and B-vitamins, and minerals - not to mention it smells AMAZING when in the oven. This simple One Bowl Pumpkin Pancake Bread is super easy, requires minimal dishes, and is, of course, #prettybalanced.

Ingredients
1 cup pureed pumpkin
2 large eggs
½ cup plain Greek yogurt
2 cups your favorite pancake mix (choose whole-grain for more fiber or gluten-free if desired. I used Bob’s Red Mill gluten-free pancake mix.)
1 tsp pumpkin spice
1 tsp ground cinnamon
¾ cup sugar (or sweetener of choice)
½ cup your favorite add-ins + more for topping (optional: chocolate chips, walnuts, etc. - whatever you’d like!)
Directions
Preheat the oven to 350° Fahrenheit
Spray a medium-sized bread pan with nonstick spray and set aside
In a large mixing bowl add the pumpkin, eggs, and yogurt and mix thoroughly
Add the pancake mix, pumpkin spice, cinnamon, and sugar and mix together until a batter-like consistency forms
Fold in the chocolate chips
Place in the oven for 45-60 minutes, or until the toothpick comes out clean from the center
Store in the fridge for up to a week or freeze for up to 3 months
