Mediterranean Grain Bowl

It’s farmer’s market season!  There’s nothing more satisfying than enjoying fresh produce that was picked close to home.  Not only does local food have more flavor, but it is better for the environment, has more nutrients, and supports the local economy.  

This Mediterranean Grain Bowl is made with local tomatoes and cucumbers.  It is full of flavor and is packed with fiber, healthy fats, and antioxidants.  This recipe makes a yummy and satisfying meat-free meal or side dish and can easily be doubled, tripled, or quadrupled as needed.  


  • ½ cup cooked brown rice or quinoa, flavored to taste

  • ½ canned chickpeas, drained and rinsed

  • ⅓ cup grape tomatoes, halved

  • ½ cup sliced cucumber 

  • 4-5 katamala olives, halved

  • 1-2 tbsp feta cheese, crumbled 

  • 1-3 tsps olive oil

  • 2 tbsp hummus 


  1. Place the rice in a desired serving bowl

  2. Top off with chickpeas, tomatoes, cucumbers, and olives (have fun with plating!)

  3. Crumble feta on top

  4. Drizzle olive oil 

  5. Top off with your favorite hummus
