Pretty Balanced Dark Chocolate Sea Salt Granola is made with rolled oats, chia seeds, and nuts, making it a good source of fiber. It also contains antioxidants from the cocoa powder and dark chocolate chips and heart-healthy fats from the nuts and chia seeds. This granola makes a perfect snack by the handful or on top of your favorite yogurt or ice cream.
3 cups rolled oats (use gluten-free, if desired)
3 Tbsp. cocoa or cacao powder
1 tsp. kosher salt
a sprinkle of coarse sea salt (for topping)
1/4 cup chia seeds
1/2 cup loosely chopped nuts (I used mixed nuts, but you can use whatever you have on hand)
1/2 cup dark chocolate chips (use dairy-free, if desired)
3/4 cup liquid sweetener of choice (I used local honey, you can also use 1/2 cup if you would like your granola less sweet)
1/4 cup coconut, canola, or olive oil (coconut oil will give it a more sweet aroma where olive oil will produce a more nutty flavor)
Preheat the oven to 325 degrees.
Line a sheet pan with parchment paper.
In a medium mixing bowl, add the oats, cocoa powder, kosher salt, chia seeds, and chopped nuts.
In a microwave-safe bowl, add the liquid sweetener and oil, and microwave for 30 seconds.
Pour the microwaved contents into the mixing bowl and toss together until everything is evenly coated.
Pour the granola mixture onto the parchment paper and spread it out to an even layer.
Leave in the oven for 20-25 minutes or until you see slight toasting of the oats, tossing halfway through.
Once out of the oven, add the chocolate chips and mix it around, coating the granola.
Sprinkle with sea salt and let cool completely.
Store in an airtight container for up to two weeks.
