Curly Kale Greek Salad

Kale is a nutrition powerhouse. It is packed with vitamin K that is used for blood clotting and bone health. Kale also contains the antioxidants vitamins A and C, which keep that immune system strong (hello, COVID season!) and promotes healthy beautiful skin. It also has potassium, which is important for fluid balance and heart health. Who knew a salad could promote healthy bones, beauty, and strong immunity?!

This Curly Kale Greek Salad is my twist on a traditional Greek salad, but packed with even more nutrients! Make this salad #prettybalanced by topping it off with your favorite protein, such as chickpeas, chicken, or salmon.


  • 2 handfuls of curly kale, chopped without the stem

  • ¼ cup sliced tomatoes

  • ¼ cup sliced cucumber

  • 2-3 katamala olives, halved

  • 1-2 tbsp feta cheese, crumbled

  • 1 tbsp chopped nuts (I love using walnuts, pecans, and pine nuts)

  • 1 tbsp chopped red onion (optional)

  • 1 tbsp Extra virgin olive oil

  • Juice of ½ lemon

  • Salt and pepper to taste


  1. Place the olive oil and lemon juice into a small bowl and whisk together.

  2. Add salt and pepper to taste, whisk and set aside.

  3. Place the kale in a medium mixing bowl and pour the dressing over the it.

  4. “Massage” the dressing into the kale. This helps break down the fibers, making it easier to chew and digest.

  5. Place the massaged kale into a serving dish and top with the rest of the ingredients.

  6. Top with your favorite protein for a #prettybalanced meal or serve as a side.
